Confetti Cake Protein Balls

INGREDIENTS —

  • ½ cup almond meal

  • 1 scoop Ritual protein powder

  • ⅛ teaspoon salt

  • ¼ cup almond or cashew butter

  • ¼ cup maple syrup

  • 1 teaspoon almond extract

  • 1 teaspoon vanilla extract

  • 4-6 tablespoons rainbow sprinkles, preferably natural with no artificial colors

 

TO MAKE IT —

  1. Grab a large mixing bowl. Add almond meal, protein powder, and salt; whisk together to incorporate.

  2. Add in nut butter, maple syrup, almond extract, vanilla extract, and 3 tablespoons of the sprinkles.

  3. Get in there with your (clean) hands and mix everything together. You want the mixture to hold together when you squeeze it. If the mix is too dry and crumbly, add a splash more maple syrup; if it’s too wet, add more almond meal, a tablespoon at a time, until you have a texture that holds together and doesn’t stick to your hands too much.

  4. Roll the “dough” into small tablespoon-size balls. If you want, add more sprinkles in the bowl and roll the outside of the balls around to decorate the outsides.

  5. Eat right away or refrigerate to firm up a bit more. These bites keep well-sealed in the refrigerator for 1 week.

 

Notes—

This recipe was developed with Ritual's protein powder, but feel free to substitute another - I would start with replacing an equal amount by weight. Just know that you might have to adjust some of the ratios by adding more maple syrup or almond meal.

Variation—

Cookie dough protein balls: Sub almond extract with an extra teaspoon of vanilla extract. Replace sprinkles with ¼ cup of mini chocolate chips or cacao nibs.

For my people out there that don't know, I've long worked with the inimitable vitamin company, Ritual, as their chef before the whole pandemic mess (hiii, I miss you guysss!).

Luckily, we've stayed connected during quarantine by doing some recipe development projects and it's been so much fun that I'm going to share one of the recipes here so YOU can make it too.

Ritual asked me to create recipes featuring their brand new protein formula, which was a delight because it's an *actually delicious protein powder* that doesn't have all these extra weird ingredients you don't want in it. Miracles exist! (You can go peep it here.)

Since I taught this recipe in a live Zoom class with people of all cooking levels, I wanted to create something that’s incredibly attainable, forgiving, AND one that you would want to make over and over again. I’m pretty sure it worked because everyone flipped out over how yum they are.

Health food ‘balls’ may be a dime a dozen; but to me, this is my favorite version I've ever eaten. They're not as dense as the popular 'raw' versions out there that use dates and nuts as a base, and they eat a little less heavy too. So, yeah, you can eat more of them 😉

The bonus is that it comes together in one mixing bowl and they're impossible to screw up. Easy peasy.

  • long-lasting; keeps for up to a month (probably longer🤷‍♀️)

  • nourishing and rich in good fats, protein, and carbs

  • really damn tasty and cute

Oh and hot tip (since it's July right now and we're all melting out here): pop them in the freezer for a treat reminiscent of frozen cookie dough.
